Grilled Caribbean Chicken Breasts
SERVES 4
- 4 chicken breasts halves
- 1 tablespoon orange zest
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon crushed fresh ginger
- 60ml orange juice
- 2 cloves garlic, crushed
- 1/2 teaspoon Louisiana hot sauce (you can get some great hot sauces in most supermarkets – buy to your own taste)
- 1/2 teaspoon oregano
Place the chicken breasts in a folded piece of clingfilm; slightly flatten the upper portion of each breast with a rolling pin. Place the breasts in a shallow glass dish. Combine the remaining ingredients in a small bowl and pour over the chicken. Cover with clingfilm and marinate in the fridge for at least 2 hours (up to 4). Remove the breasts from the marinade and place them under a preheated grill and cook for about 6-8 minutes on each side.
