Caribbean Chicken Breasts

Caribbean Clean & Lean Recipe
With a few simple steps you’ll be the king of your kitchen and if you plan it well enough you’ll have some tasty left overs for work the next day. Everybody wins. That’s our kind of recipe. Follow these simple steps for Carribbean goodness!
- 4 chicken breast halves
- 1 tablespoon orange zest
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon crushed fresh ginger
- 60ml orange juice
- 2 cloves garlic, crushed
- 1/2 teaspoon Louisiana hot sauce (you can get some great hot sauces in most supermarkets – buy to your own taste)
- 1/2 teaspoon oregano
Place the chicken breasts in a folded piece of cling wrap; slightly flatten the upper portion of each breast with a rolling pin. Place the breasts in a shallow glass dish. Combine the remaining ingredients in a small bowl and pour over the chicken. Cover with clingfilm and marinate in the fridge for at least 2 hours (up to 4). Remove the breasts from the marinade and cling wrap, place them under a preheated grill and cook for about 6-8 minutes on each side.
